Southwest Slaw

Ingredients

• ⅓ cup Marie’s^® Creamy Avocado Poblano Dressing
• 2 cups kale, chopped
• 1 cup red cabbage, shredded
• 1 cup jicama, shredded
• 1 cup black beans, canned
• 1 cup roasted corn
• 1 cup red onion, julienne
• ½ cup red peppers, diced
• ¼ cup cilantro, chopped
• ¼ cup spiced pepitas
• Salt and pepper to taste

Preparations

1. Mix all ingredients together and toss in the dressing. Combine well.
2. Add salt and pepper to taste.
